3Add hot water very slowly to mixture and use a fork or wooden spoon to mix.
-
4Continue mixing and very slowly adding water until the dough is soft and pliable, but not sticky.
-
5Lightly knead the dough on a clean surface with a small amount of additional flour if needed until the dough is a smooth and consistent texture.
-
6Wrap the dough in plastic, I use oven roasting bags because they are durable and can be reused and they can also store cooked tortillas
-
7Let the dough rest for ⏱️ 30 minutes to ⏱️ 2 hours .
-
8Unwrap and divide the dough into 8 pieces, roughly 100g each
-
9Round each dough piece.
-
10Preheat a skillet or large flat cooking surface like a baking steel. a cast iron pan 12- inches or bigger works great.
-
11Once the cooktop is very hot, one by one, roll out the dough rounds with as little flour as possible, be careful not to roll out too thin, about 9 to 11 inches diameter.
-
12Transfer each rolled out tortilla dough onto the hot cooktop and cook for only a few seconds each side — once you see the edges begin to color and bubbles have only just begun forming, turn to the other side using a spatula or flat wooden spoon, cook ⏱️ 10-20 seconds per side.
-
13After cooking place between two towels, and stack each tortilla together as they are finished.
